Paddy B's Recipe Of The Week
Paddy B's own delicious recipe, as heard live on Thursday 4th February 2010.
Two large potatoes, two leeks, stock cube chicken/veg,
Peel & chop the potatoes. Clean the leeks, chop the roots and tops off the leeks. Cut the leeks and add to a large pan with the potatoes. Dissolve the stock cube in a pint of boiling water. Pour the stock over the leeks and potatoes. You may need to add some more water to cover the leeks and potatoes. Bring to the boil then simmer until the potatoes are cooked, if they are cooked so will the leek. Mash them together with a potato masher, then blend until smooth. Add salt and pepper to taste.
